Ingredients

Popcorn balls
  • 12 cup popped popcorn Use freshly popped or very dry popcorn for best crunch.
  • 1 cup sugar
  • 0.5 cup butter
  • 0.5 cup corn syrup
  • 1 tsp vanilla
  • 0.5 cup Halloween sprinkles Choose orange and black sprinkles for a Halloween look.

Equipment

  • 1 sheet pan

Method

Prepare the popcorn
  1. Place the popped popcorn in a large greased bowl so the caramel coating won’t stick to the sides.
  2. Set up a sheet pan for shaping so the balls can cool in one layer.
Make the caramel coating
  1. Bring the sugar, butter, and corn syrup to a boil over medium heat, stirring until smooth.
  2. Boil the caramel for 4 minutes without stirring, watching for a steady bubble; set a timer.
  3. Stir in the vanilla right after the 4-minute boil so the mixture stays glossy and fragrant.
Coat and shape
  1. Pour the hot caramel over the popcorn and mix until every kernel looks evenly coated.
  2. Shape into balls with buttered hands so the mixture doesn’t stick; add Halloween sprinkles as you form each ball.
  3. Let the balls cool on the sheet pan until firm to the touch, about 10 minutes, then serve.

Notes

Pro tip: butter your hands and work quickly after pouring the caramel—once it starts to cool, it gets harder to shape. Store airtight at room temperature for up to 3 days; refrigerating can soften the coating. Freezing is not recommended because the caramel can lose its firm texture. For a vegetarian-friendly swap, use plain butter and vanilla with no animal-derived additives.
