Cook the ramen
- Bring a pot of water to a boil, then cook the instant ramen noodles until tender, about 2 to 3 minutes.
Make the peanut sauce
- While the noodles cook, whisk together the creamy peanut butter, chili garlic sauce, soy sauce, and brown sugar until smooth.
Sauce and finish
- Reserve 1/4 cup of the noodle cooking water, then drain the noodles.
- Stir the hot reserved noodle water into the peanut sauce until smooth and glossy.
- Toss the drained noodles with the sauce until fully coated.
- Top with sliced green onions and crushed peanuts before serving.
Notes
Pro tip: for the silkiest sauce, add the reserved noodle water gradually while stirring so the peanut butter loosens into a glossy coating. Store leftovers in the fridge up to 2 days; reheat in a pan with a splash of water to loosen. Freezing isn’t recommended because ramen noodles tend to soften too much. For a lower-carb option, use a lower-sugar sweetener instead of brown sugar while keeping the peanut butter base.
